Paleo Energy Bars
Want to make your own healthy energy bars that you can pack your freezer full of?? Even the kids will love them!

Yield: 1 8x8" pan
- 1 cup cashews
- 1 cup pecans
- ½ cup almond flour
- ½ cup nut butter (almond or cashew)
- ½ cup coconut oil
- ¼ cup honey
- 2 tsp vanilla (1 tsp each extract and vanilla bean powder)
- ½ tsp salt
- 1 cup dried fruit (bananas, apples, cranberries, goji, blueberries)
- ½ cup shredded coconut
Heat oven to 375 F
place all the nuts on a tray and toast in oven till just starting to turn a light brown (watch them!)
chop nuts up or lightly pulse in food processer
Melt coconut oil, honey, and nut butter – add vanilla and salt.
Combine nuts and oil mixture then mix in fruit, coconut and almond flour
Press into parchment lined pan and cool in fridge or freezer before cutting into bars.
Store in fridge.
