Chicken Fingers
Paleo nut-free chicken fingers, that taste just as good cold as they do warm. This is fun to do the night before with the kids and if you make lots of the chicken fingers they are great to throw in the freezer for another day that week! Easy peasy!

Ingredients
- 4 free-range chicken breasts, sliced in 3-5 strips and pounded thin
- 1 cup ++ coconut oil, for frying
- Egg Wash:
- 4 eggs, whisked
- ½ cup coconut milk
- ½ Tbsp garlic powder
- ½ Tbsp chili powder
- ¼ tsp salt
- ¼ tsp pepper
- Breading:
- 3 cups cassava flour (can find at health food store)
- 1 ½ cups coconut flour
- 1 cup grated parm cheese (if handle dairy)
- 2 Tbsp garlic powder
- 2 Tbsp chili powder
- 1 Tbsp cumin
- 1 tsp smoked paprika
- 2 tsp salt (himalayan)
- ¼ tsp pepper
Directions
Mix all egg wash ingredients and all breading ingredients in separate bowls.
Dip strips one at a time in egg wash, then breading mixture. Coat evenly.
Fry in batches using 1/3 cup hot coconut oil each batch.
Lay out of baking sheet and finish in the over for 10min – till completely cooked through
